At El Mirador de Segura de Jaén, we understand that producing exceptional extra virgin olive oil involves much more than just achieving an unmistakable flavour or perfect texture. It involves caring for the land, protecting natural resources and working every day with respect for the environment that makes our work possible.

Our philosophy is based on a very simple principle: if we take care of the olive grove, the olive grove takes care of us. That is why sustainability is at the heart of everything we do, from cultivation to packaging. Every decision we make seeks to balance Jaén’s agricultural tradition with the most innovative and responsible practices of the present.

Responsible agriculture and respect for the land

Our olive groves extend across the heart of the Sierra de Segura, a privileged environment that combines a unique climate, altitude and biodiversity. We work according to the principles of sustainable agriculture, minimising the use of chemicals and prioritising natural biological control methods.

Harvesting is carried out at the optimum moment of ripeness, using modern machinery that minimises the impact on the soil and trees. In addition, we promote soil regeneration through vegetation cover that prevents erosion and improves natural fertility. All of this helps to preserve the balance of the ecosystem and ensure that olive groves continue to be a source of life and wealth for future generations.

Energy efficiency and circular economy

Sustainability is also reflected in our production processes. At our oil mill, we implement energy efficiency systems, harnessing renewable energies to reduce CO₂ emissions and fossil fuel consumption.

Water, a fundamental resource for life and agriculture, is managed responsibly through controlled irrigation systems and rainwater recovery. By-products of the process, such as olive pomace and pruning waste, are reused as biomass or compost, closing the natural cycle of the olive grove and avoiding any type of waste.

In this way, we not only obtain the highest quality oil, but also actively contribute to a circular economy model, where nothing is lost and everything is transformed.
